This crock is perfect for making large quantities of sauerkraut, kimchi, and for pickling vegetables and fruits.
Some vegetables and fruits that could be pickled with this crock include pickles include cucumbers, asparagus, beets, bell peppers, blueberries, cauliflower, carrots, cherries, fennel, ginger, grapes, green beans, mushrooms, onions, parsnips, peaches, sweet peppers, radishes, ramps, rhubarb, strawberries, squash, tomatoes, turnips, watermelon, onions, garlic and hot peppers.
For many years, pottery and ceramics have been proudly made by the hands of highly skilled craftsmen in Boleslawiec, Poland. One of the products these craftsmen produce using traditional ceramic techniques is the Fermenting Crock Pot.
Each crock is handmade and decorated using a unique method of hand-stamping. They are made from regional, enriched vitrified* clay providing a very strong, yet elegant building material. The pot is finished with beautiful lead-free glazes.
These crocks are built to produce sauerkraut, Kimchi, pickles and other fermented vegetables for many years.
*Vitrifying is a process that fuses the clay particles to a very hard, inert, glass-like state.
Polish Fermenting Crocks are designed with an airtight water-sealable cover to foster a fermenting process that reduces the need to repeatedly open the pot to scrape off the surface mold. Simply pour a small amount of water into the channel along the top of the crock, put the top in place to allow gases to escape and keep oxygen out.
Natural lactic acid fermentation is one of the oldest and healthiest means of food preservation. It allows natural, beneficial bacteria to perform a fermentation process in which vegetables develop a pleasantly sour taste and remain rich in vitamins and minerals. Lactic acid, fermentation is the only method of preservation that retains all the natural plant ingredients while improving the quality, taste, and aroma. To determine which size pot is best for you please remember you can only fill a pot with 80% of its total capacity.
